USE OF SAFFRON PROCESSING RESIDUES
The only portion of the Saffron plant that is used are the pistils of the flowers; all the rest, although edible, constitutes processing residue. Indeed, the relationship between residue and final product is highly unbalanced: it is estimated that between 100,000 and 150,000 flowers are needed to obtain 1,000 grams of Saffron, and each Saffron bulb produces about 2-3 flowers.
In a world that imposes eco-sustainability as a founding and essential principle for the third millennium agriculture, our company’s priority is to increase the sustainability of Saffron farming by developing a production chain for the recovery of by-products and residues.
