Our land

The loose, well-drained and sun-kissed soils of our land, together with the passion and experience of our family-business under the hills of Vigoleno (Piacenza) and of the small Italian farms with which we share values ​​and methodologies, allow us to offer a very high-quality product, rich in beneficial properties and with a unique aroma.

Pure certified saffron

Percorso Zafferano s.r.l. offers an ISO 3632-2:2010 (saffron test methods) and ISO 3632-1:2011 (saffron specifications) certified product, submitted to rigorous quality and traceability controls from field to individual package.

After each yearly harvest, our Saffron pistils are analysed, following the international guidelines defined by ISO 3632, to verify their quality and purity. Only category 1 pistils, i.e. those fulfilling the requirements indicated in the table, enter our production process. This allows us to guarantee our customers, year after year, the same excellence.

Why in pistils and not powdered?

Because we allow customers to see what they buy, adding an additional guarantee of quality. Fraud can occur more easily with saffron powder, where it is easier to mix in other substances that degrade the beneficial properties of the product.

At the request of our customers, we can supply our product already ground.

Processing and Packaging

Our saffron is processed manually: flowers are harvested manually early in the morning before they open. Manual is the ‘husking’, which consists in separating the purple stigmas from the rest of the flower. Stigmas are then dried at low-temperature the same day of harvesting to ensure the best organoleptic properties, becoming the spice we know.

Packaging is done also manually. Depending on quantity and customers specific requests, our Saffron is packed either in sterile glass jars with hermetic screw caps, or in Pergamin Argento noble food paper sachets, ensuring best conservation.
